Danielle Arsenault is the founder of Pachavega Living Foods Education and a longtime educator in plant-based culinary arts and holistic wellness. Her work is rooted in a deep respect for life, nourishment, and the role food plays in supporting long-term health and vitality.
After a life-altering rock climbing accident in 2011, Danielle’s relationship with food and living shifted in a lasting way. Through her own healing journey, she came to understand food not as a trend or identity, but as a practical foundation for resilience, recovery, and everyday wellbeing. This understanding continues to shape the philosophy behind Pachavega today.
Danielle is a professional educator, internationally recognized chef, and the author of seven cookbooks. She is a best-selling co-author, has spoken on the TEDx stage, and has been featured in dozens of podcasts, publications, and international wellness platforms. Over the past decade, her work has supported thousands of students through online education, certifications, and in-person trainings around the world.
Her professional background includes teaching at the college level, working as a raw food chef and nutrition consultant in a tropical wellness resort setting, and developing comprehensive curricula for Pachavega’s Online Culinary Arts Institute and holistic wellness retreats. She currently lives on Ometepe Island, Nicaragua, where she continues to support community education initiatives and the development of La Vida Bonita Retreat Center.
Today, Danielle serves as founder and visionary of Pachavega, guiding its educational framework, philosophy, and long-term vision as the school continues to grow beyond any single individual.
